Authentic Pico de Gallo recipe (a versatile authentic Mexican salsa recipe)

When people speak of authentic Mexican food, I often notice the topic of Mexican salsa recipes comes up a lot.  "Those chiles serranos sure pack some fire!" she says; "I loved that salsa verde at that taco stand we went to for lunch!" says another.  One thing for certain is that if you get into a discussion with someone about Mexican salsa recipes, it won't be long before someone is telling you about an authentic pico de gallo recipe.

Pico de gallo is the most popular Mexican salsa recipe in the country and it's no wonder why: it instantly injects fresh flavor into whatever you spread it on, be it tacos, sincronizadas, meat of some kind–whatever.  This salsa is very versatile and it is used in a lot of different Mexican dishes.  It's easily identifiable by it's colors: those of the Mexican national flag, namely green, red, and white.  This is why this salsa is often referred to as salsa Mexicana and salsa bandera.  Whatever you call it, if you wander across the border into Mexico and grab something to eat along the way, you are going to see this in a salsa bar somewhere, almost guaranteed!
